U is for Upside-Down Pineapple Cake!


It's a retro 80s throwbacks for 'U'! This is a really moist sponge (know you all love that word S), and I actually think it's an underrated bake.

INGREDIENTS…


For the upside down part:

50g butter, room temp

50g light soft brown sugar

7 pineapple rings in syrup or own juice, drained and keep 2 tbsp of the pineapple juice/syrup

7 glacé cherries


For the cake:

200g butter, room temp

200g golden caster sugar

200g self-raising flour

1.5 tsp baking powder

2 tsp vanilla extract

4 large eggs



INSTRUCTIONS…


Preheat the oven to 160 degrees fan.


For the upside down part, beat the butter and light soft brown sugar together in a large bowl with a hand mixer until creamy.


Spread over the base and a quarter of the way up the sides of a 20cm round cake tin using the back of a spoon.


Arrange the pineapple rings on top, then place the glacé cherries in the centres of the rings.



Place the softened butter, golden caster sugar, self-raising flour, baking powder, vanilla extract and eggs into the large bowl you used for the earlier step. Add the reserved pineapple syrup/juice. Beat for about 1-2 minutes with a stand mixer until soft and well combined.


Pour into the tin on top of the pineapple and smooth out with a spoon or spatula.


Bake for 30mins. Then cover with a sheet of tin foil and cook for a further 9-11 minutes until a skewer comes out clean. Leave to stand for 5 mins, then turn out onto a plate.


Best served warm with a scoop of ice cream or custard.
