‘R’ is for Rhubarb Crumble!


A rhubarb crumble is a classic for a reason - perfect for this change in weather and delicious with sweet custard or ice cream!

INGREDIENTS…

Serves 8-10


For the rhubarb:


800g rhubarb (about 1kg untrimmed weight), washed and chopped into 2-3cm pieces 150g caster sugar

20g butter

2 tsp vanilla extract

1 tsp cornflour


For the crumble topping:


200g plain flour

150g butter, straight out of the fridge

80g rolled oats

100g Demerara sugar

75g caster sugar

Sprinkle cold water

Ice cream or custard, to serve



INSTRUCTIONS…


Preheat the oven to 170 degrees fan.


Add the chopped rhubarb, caster sugar, butter, vanilla and cornflour into a large saucepan.


Cook over a low heat for 15-20 minutes until softened.

Tip the rhubarb into a large baking dish and spread in an even layer.


In a large bowl, rub the flour and butter together with your hands (it's better if your hands are cold), until the mixture looks like breadcrumbs.


Stir in the oats and the sugar and combine. I like to add a few sprinkles of cold water and rub through to create a slightly stickier mixture. Sprinkle the crumble mixture over the apple. Bake in the oven for 25-30 minutes until golden.


Serve with custard and/or ice cream and enjoy!
