‘Q’ is for Quiche! ‘Q’ was a hard letter but I reckoned quiche was the best option, even if it is a savoury bake!
My dad had loads of homegrown tomatoes ripe over the weekend so I thought this was a great way to use some of them up.
You could also use a pre baked pastry base and have this made in 20 mins!

INGREDIENTS…
Serves 8
320g pack shortcrust pastry
300g tomatoes - cherry tomatoes or regular tomatoes, cut into 6
Spray vegetable oil
Salt and pepper
50g Parmesan or cheddar cheese, grated
2 large eggs
300ml double cream
Handful of fresh basil leaves shredded, plus a few small ones left whole for decoration
INSTRUCTIONS…

Drape the pastry over a 25cm loose-bottomed cake tin. There will be some extra pastry hanging over the sides.
Push the pastry into the corners of the tin being carefully not to make any holes. Chill in the fridge for 20 mins.
Preheat the oven to 180 degrees fan.
In a small roasting tray, spray the tomatoes with the oil and season well with salt and pepper. Put the tomatoes into the oven for about 25-30 minutes.
Lightly prick the pastry base with a fork.
Set a sheet of greaseproof paper over the top of it, then fill with baking beans or rice.
Blind bake for 20 mins, then remove the paper and baking beans. Return to the oven to cook for 5-10 mins until dark golden brown.
Meanwhile, beat the eggs in a large bowl. Add the cream, then stir in the basil and season with plenty of salt and pepper.
Take the pastry case and tomatoes out of the oven.
When the pastry case is cooked, sprinkle half the cheese over the base.
Scatter over the tomatoes, pour over the cream mix, then finally sprinkle over the rest of the cheese.
Bake for 18-24 mins until set and golden brown. Leave to cool in the case, trim the edges of the pastry with a sharp knife, then remove from the tin onto a serving plate.
Scatter over the remaining basil and serve in slices. The perfect summer lunch!
