Jill Bakes the Alphabet | 'J' is for Jam & Coconut Sponge

This is the easiest cake to make EVER!! Made in 10 mins using the all-in-one method and using store cupboard ingredients - perfect if you want something sweet in a hurry!
If this dessert is on a menu out I will nearly always order it - one of my all-time favourites.
This cake freezes really well, if you don't need it all at one time, but freeze prior to adding the jam and coconut.

INGREDIENTS…
Serves approximately 15
225g butter or spread, at room temp
225g caster sugar
285g self-raising flour, sifted
2 tsp baking powder
2 tsp vanilla extract
4 tbsp milk
4 large eggs, at room temp
Approx. 6 tbsp raspberry jam
Desiccated coconut, to sprinkle
INSTRUCTIONS…

Preheat the oven to 160 degrees fan.
Line a 9x13 inch baking tin with baking paper.
In a stand mixer, mix together all the ingredients for 2 minutes.
Pour into your lined tin. Spread the top flat with a spatula.
Bake on the middle shelf for 32-36 minutes until golden and a skewer comes out clean. If you press the top gently with your finger it should bounce back.
Remove from the tin onto a cooling rack.
Carefully peel off the baking paper. Leave for a couple of minutes to cool.
Flip the cake so the top is facing up again.
Spread over the jam while it's still warm and sprinkle over the coconut.
Cut into pieces with a sharp knife and serve either on its own or preferably with custard!!
