Jill Bakes The Alphabet | ‘N’ is for Nutella-Stuffed Cookies

‘N’ just had to be for Nutella and you don't get a much better bake than chocolate chip cookies filled with Nutella, in my opinion!

INGREDIENTS…

Makes 10 large cookies


150g unsalted butter

110g caster sugar

140g soft light brown sugar

2 tsp vanilla extract

1 large egg, at room temperature

1 large egg yolk, at room temperature

275g plain flour

1 level tsp baking powder

1/4 tsp sea salt

100g dark chocolate chunks or chopped chocolate

100g milk chocolate chunks or chopped chocolate

10 tsps Nutella


INSTRUCTIONS…


Place 10 separate teaspoons of Nutella on a sheet of baking paper - put into the freezer for an hour to harden.


Melt the unsalted butter in a large microwaveable bowl for 20-30 seconds at a time until fully melted.


Add the sugars, vanilla, egg and egg yolk into the melted butter and mix together until fully combined.


Sieve in the flour, baking powder and salt and fold through to form a cookie dough. Don't over-mix.


Fold in the chocolate. Cover with clingfilm and chill for an hour in the fridge.


Use a tablespoon to measure out evenly sized dough balls. Wrap the dough around each frozen Nutella blob and roll into balls with your hands. Set on a plate or freezer-safe container and freeze overnight.



When you're ready to bake the cookies, preheat the oven to 160 degrees fan and line baking trays with baking paper.


Place the cookies on the tray leaving a good space between each ball as they will spread - I put a maximum of 4 on each tray.


Bake for 16-19 minutes. The cookies should be golden on the outside but the middle still pale and soft.


Leave on the baking tray for 10-15 minutes to cool down and firm up.


You can freeze the cookie dough balls wrapped in cling film to bake whenever you need a sweet fix!!
