Jill Bakes The Alphabet | ‘S’ is for Sticky Toffee Pudding

It's an all-in-one self-saucing Sticky Toffee Pudding (STP) recipe that's so easy to make and it's unreal.


I think of myself as a bit of a STP connoisseur - if it's on a dessert menu 9/10 times I will order it!


The Bushmills Inn is, in my opinion, the holy grail of STP but this is one you can easily make at home and it tastes pretty amazing!


Dates in STP are always controversial so are entirely optional in this recipe - I personally leave them out but if using I suggest blending them.

INGREDIENTS…

Serves 8


75g dark soft brown sugar

25g light soft brown sugar

180g self raising flour

130ml semi-skimmed milk

1 large egg

2 tsp vanilla extract

Pinch salt

50g unsalted butter, melted

150g dates, blended or chopped (optional)

100g light soft brown sugar

100g dark soft brown sugar

30g unsalted butter, in tiny blobs

500ml boiling water

2 tsp double cream (optional)


Ice cream, to serve



INSTRUCTIONS…


  1. Preheat oven to 180 degrees fan. Grease a 1.5 litre pudding bowl or a medium casserole dish.


  2. Combine the sugar, flour and salt in a large bowl.


  3. Add the milk to a large measuring jug, then whisk in the egg, melted butter and vanilla. Pour this into the dry ingredients and mix. Stir in the blended dates if adding them. Pour into the greased pudding dish.


  4. Add the two sugars in a mountain on top of the cake mixture!


  5. Scatter over little blobs of the butter, then gently pour on the boiling water.


  6. Bake for 45-55 minutes until the sponge has risen to the top and is springy to touch.


  7. To serve, portion out the sponge into bowls. The sauce will be left at the bottom of the pudding bowl and is delicious just as it is but l love to stir in some double cream to create an even yummier sauce! Serve with ice cream and enjoy
