Nothing screams summer more than Wimbledon-inspired strawberries and cream!
This cheesecake is a perfect summer dessert and of course uses the best local cream and ingredients!

INGREDIENTS…
Serves 12-14
For the base:
300g Digestive biscuits
150g butter or spread, melted
For the cheesecake:
495g full fat cream cheese
250g icing sugar
250ml double cream
1 tsp vanilla extract
200g strawberries, diced into small pieces
To decorate:
2 tbsp icing sugar
1 tsp vanilla extract
250g strawberries, halved
250ml double cream
2 tbsp icing sugar
INSTRUCTIONS…
Crush the biscuits in a food bag with a rolling pin until fine crumbs. Melt the butter in a large saucepan and then pour in the biscuit crumbs. Stir well to combine. Transfer into an 8 or 9 inch springform tin and press down firmly with the back of a spoon or a potato masher. Set in the fridge.
Cream together the cheese, vanilla and icing sugar in a large bowl with a hand whisk or in a stand mixer.
In another bowl lightly whip the cream until it just holds its shape. Fold this gently into the cheese mixture. Then add the chopped strawberries and combine - try not to overmix.
Pour onto the chilled biscuit base and spread out evenly.
Chill in the fridge for at least 4-5 hours but preferably overnight.
In a medium bowl, mix the strawberries, icing sugar and vanilla. Set in the fridge for 30-60 minutes.
Whip the double cream with the icing sugar. Fill a piping bag fitted with a large closed star nozzle with the whipped cream.
Remove the cheesecake from the tin onto a serving plate.
Pipe on 12 cream rosettes around the outside.
Add the strawberries into the middle of the cheesecake.
Slice and enjoy!
