Jill Bakes | Roasted Red Pepper Soup

Spring is in the air but it’s definitely still soup season!


This one perfect for batch cooking and freezing for a handy lunch to take to work.

INGREDIENTS…

Serves 4


Spray veg oil

1 red onion, in large chunks

3 red peppers, in large chunks

2-3 carrots, peeled and chopped into small chunks

1 tsp smoked sweet paprika

3 chicken stock pots dissolved in 750ml

boiling water

1 tsp garlic purée

1/2 tsp ground cumin

1/4 tsp ground coriander

Chilli powder (to taste, I use a pinch as don't like it hot!)

3 tbsp double cream or reduced fat creme fraiche

Salt and black pepper

INSTRUCTIONS…


Preheat your oven to 180 degrees fan.


Add the chopped onion, peppers and carrots into a large baking tray. Spray with vegetable oil, add the paprika and toss. Cook in the oven for 30-40 minutes or add to your air fryer and cook for about 20 minutes.


Transfer the roasted veg to a large saucepan. Add the chicken stock, garlic purée, spices and season well with salt and pepper. Bring to the boil, then reduce the heat and simmer for 15-20 minutes.


Blend with a hand blender until smooth.


Add the cream and stir through. Then serve and enjoy!
