Jill Bakes | One-Pan Pesto Chicken Pasta

This is a really simple and tasty one-pan pasta dish... I love it and I think you will too despite it not looking the most appetising colour!


Any leftovers heat up so well for lunch the next day too!

INGREDIENTS…

Serves 4


Spray veg oil

4 chicken breasts, in strips

2 peppers, finely sliced

1 onion, finely sliced

250g mushrooms, sliced

300g penne or fusilli pasta

2 chicken stock pots dissolved in

750ml boiling water

1 tsp onion granules

5 heaped tsp basil pesto

3 tbsp reduced fat creme fraiche or double cream

Handful grated cheddar or parmesan

Salt and pepper

INSTRUCTIONS…


Spray a large non-stick pan with veg oil spray over medium high heat. Add the chicken and cook for 2-3 minutes on each side until golden brown. Remove from the pan and aside.


Add the onion and peppers into the pan and cook for 2-3 minutes.


Then add the cooked chicken, pasta, chicken stock, onion granules, and season with salt and plenty of black pepper.


Bring to the boil, then put on the lid (or cover with foil), reduce the heat to low and simmer for 15-20 minutes until the liquid has mostly been absorbed and the pasta is cooked.


Stir in the grated cheese, pesto and creme fraiche/cream and warm through for a couple of minutes. Serve and enjoy!
