‘Marry me chicken’ went viral last year on TikTok and this is my super simple take on a one-pan pasta version. The recipe was given the name because apparently it’s so good that anyone you make it for will want to marry you!
You only need one pan and 30 minutes to make this really tasty dinner which I reckon everyone will love.

INGREDIENTS…
Serves 4
Veg oil spray
3-4 chicken fillets, in strips
250g mushrooms, sliced
2 peppers, sliced
1 onion, sliced finely
10 sun-dried tomatoes, chopped finely
1 tsp smoked sweet paprika
1/2 tsp dried oregano
1 tsp dried thyme
Black pepper
2 chicken stock pots dissolved in 750ml
boiling water
300g dried penne pasta
200ml milk
4 heaped tbsp reduced fat creme fraiche or
125ml double cream
50g grated parmesan
INSTRUCTIONS…
Spray a large non-stick pan with veg oil. Add the chicken and cook for 2-3 minutes on each side over a medium-high heat until golden.
Remove from the pan and set aside.
Add the onion, peppers and mushrooms and cook for 3-4 minutes. Add the chicken back into the pan.
Add the sun-dried tomatoes, paprika, herbs, dried pasta, chicken stock, milk, paprika and season with black pepper.
Bring to the boil, then turn down the heat and simmer for 15-20 minutes until the pasta is cooked and most of the liquid is absorbed.
(Add an extra splash of boiling water if needed during cooking if the pasta still isn't cooked)
Add the grated Parmesan and creme fraiche/ cream and warm through for a few minutes.
Serve and enjoy!
