Lemon Curd & Raspberry Scones

Easy weekend baking sorted!


You all seem to love a good scone recipe so I’m back with another yummy flavour for you to try! The smell of these baking in the oven is just incredible.


Remember - the secret to a good scone is not adding too much liquid! Too much buttermilk and they won’t rise up and be nice and fluffy so take care when adding. The mixture should be drier than you probably think.

INGREDIENTS…

Makes 4 large scones


225g soda bread self-raising flour

30g butter or spread

30g caster sugar

150ml buttermilk

2 dessertspoons lemon curd

Handful raspberries

INSTRUCTIONS…


Preheat your oven to 180 degrees fan.


Sieve the flour into a large bowl. Rub the spread into the flour until it resembles a breadcrumb texture.


Add in the sugar and combine.


Add in buttermilk and use a kitchen knife to mix until it forms a dough. Don't over-mix.


Only add enough milk to bind the ingredients, it shouldn't be too soft or they will spread too much.


Roll the dough out into a rough rectangle shape on a floured surface. Spread the lemon curd gently in a strip down the middle of the dough and sprinkle over the raspberries.


Fold the dough in on itself to contain the curd and raspberries inside. Shape into a log. Cut into 4 rough pieces. Put a little flour on your hands and roll each one into a round scone shape.


Place on a baking tray spaced a little apart and bake for 16-20 mins until just golden. Transfer to a cooling rack and enjoy!
