These blueberry oat muffins are really easy, and taste delicious.
They freeze really well so it’s perfect to make a batch and freeze some so you can bring them out for snacks or even for an on-the-go breakfast!
Mix it up and use any berries of your choice!

INGREDIENTS…
Makes 12 muffins
200g plain flour
50g porridge oats plus a few extra to sprinkle
2 tsp baking powder
150g light muscovado sugar
1 large egg, beaten
300ml buttermilk
5 tbsp (~60ml) vegetable oil
1 tsp vanilla extract
150g blueberries (fresh or frozen, or any other berry)
INSTRUCTIONS…
Preheat the oven to 170 degrees fan. Set 12 paper muffin liners into a muffin tray.
Mix together the flour, oats, baking powder and sugar in a large bowl.
Add the egg, buttermilk, oil and vanilla into the bowl of your Kenwood stand mixer and mix together with the paddle attachment for about 1 minute.
Add the flour and mix on a low speed until
combined, then fold through the blueberries.
Spoon the muffin mixture into the muffin cases.
Sprinkle a few porridge oats over the top of each muffin. Bake for 18-22 minutes until golden brown and a skewer comes out clean.
Cool on a cooling rack and enjoy!
These will keep in the freezer for about a month - simply defrost when you fancy one!
