JILL BAKES | 20-Minute One-Pan Honey Chilli Chicken Noodles

Cooking dinner doesn’t get quicker or easier than this! Made in 20 minutes and only one pan to wash up... plus you’ll probably have most, if not all the ingredients already in your cupboards and fridge! You’ve got to try this one!

INGREDIENTS…

Serves 2


Spray veg oil

2 chicken fillets, in strips

1 red onion, finely sliced

8-10 mushrooms, sliced

1 pepper, sliced

2 tbsp honey

2-3 tbsp sweet chilli sauce

2 tbsp light soy sauce

1 tbsp dark soy sauce

1 tbsp tomato ketchup

2 nests of dried noodles

Pinch chilli flakes

Salt and pepper


Noodles.


INSTRUCTIONS…


Spray a large non-stick pan with oil over a medium-high heat. Add the chicken strips, season well with salt and pepper and cook for 3 minutes on one side.

Once golden brown, turn and cook for another 3 minutes.


Boil the kettle.


When the chicken is cooked, remove from the pan onto a plate.


Add the dried noodles into a medium bowl and cover with boiling water for 4 minutes.



Meanwhile, add a small splash of boiling water into the pan. Add the onion, peppers and mushrooms and cook for 3-4 minutes until softened.


Add the honey, sweet chilli sauce, soy sauces and ketchup. Cook for a couple of minutes to warm through. Use tongs to strain the noodles and add to the pan. Toss to coat in the sauce. Add a pinch (or more) of chilli flakes to taste!


Serve and enjoy!
