Easter with Jill Bakes | Brownie Scotch Eggs

When chocolate scotch eggs became a thing last year I knew I had to try them. I’ve used white creme eggs as they’re my new obsession, but you can use the regular ones or caramel eggs if you prefer!


This is a super quick and easy recipe and they taste amazing with minimal effort – a perfect Easter treat to bake with kiddies... or big kids!!

INGREDIENTS…

(Makes 4)


300g brownies (1 box of 24 brownie bites) or use homemade ones

1-2 tbsp milk

1 tsp vanilla extract

4 Creme Eggs or Caramel Eggs of choice


INSTRUCTIONS…


Add the brownies to a stand mixer or use a large bowl and a hand mixer. Mix for a few minutes until it's like fine crumbs.


Add the vanilla and enough milk for it to form a dough that's mouldable.


Divide the mixture into 4. Take each quarter and roll into a ball in your hand and flatten it. Place a chocolate egg in the middle and gently wrap in the brownie mixture around it until fully covered.



Dampen the surface of each brownie ball with a sprinkle of water.


Add the sprinkles onto a large plate and roll each ball to coat.


Put in the fridge for a few hours to firm up, then cut open and enjoy! Will keep for a few days in the fridge.
