Northern Ireland bakery brings iconic Lamingtons to M&S shelves across the UK and Ireland

A Northern Ireland bakery is behind the launch of a new Australian-inspired treat now available in Marks & Spencer stores across the UK and Ireland.

Genesis Bakery, based in Magherafelt, has been a trusted M&S supplier for more than 15 years, producing award-winning baked goods crafted from high-quality ingredients.

The bakery currently delivers a core range of 22 products for M&S, including the popular Mini Fruity Cupcake Selection, alongside seasonal showstoppers created exclusively for the retailer.

Now, Genesis has turned its attention to introducing Lamingtons – marking the first time the iconic Australian cake has been available on the UK high street.

The new M&S Lamingtons come in two indulgent flavours:

• Chocolate & Coconut – buttermilk-enriched chocolate sponge coated in chocolate sauce, rolled in coconut flakes, and topped with hand-piped jam and buttercream.

• Caramelised Biscuit – rich chocolate sponge coated in chocolate sauce, rolled in golden caramelised biscuit crumb, and finished with hand-piped buttercream and salted caramel sauce.

Retailing at £4 for a pack of two, the Lamingtons highlight M&S’s focus on global food inspiration, following the introduction of Magic Coffee™, inspired by Melbourne’s café culture, in 2023.

Each Lamington is hand-finished by the skilled Genesis team, blending craftsmanship with innovation to deliver a modern twist on a much-loved classic.
