Golden on the outside with melted Mars bar running through the centre, these fluffy apple scones are the kind of sweet bake made for sunny weekends, iced coffees and slow spring afternoons.

The sharpness of fresh green apple cuts beautifully through the gooey chocolate and caramel, creating a bakery-style treat that feels nostalgic without being too heavy for the season. Finished with a drizzle of melted milk chocolate and topped with chunks of Mars bar, they look every bit as irresistible as they taste.

A playful twist on a nostalgic favourite

Jill Stewart’s latest recipe takes a combination many people grew up loving — Mars bar and apple — and transforms it into a tray of soft homemade scones perfect for late spring and summer baking.

“You all know I love a Mars bar and apple sandwich, so, Mars bar and apple scones are just next level!” Jill said.

The result is a bake that feels fun, familiar and ideal for sharing, whether it is a weekend kitchen session, an afternoon coffee catch-up or simply something sweet to enjoy while the warmer weather lasts.

Mars Bar & apple scones recipe

Ingredients

Makes 4 big scones

• 225g soda bread self-raising flour

• 30g butter or spread

• 30g caster sugar

• 140ml buttermilk

• 2 Mars bars, sliced

• 1 small green eating apple, peeled, cored and cut into small chunks

To decorate

• 8 squares melted milk chocolate

• Extra Mars bar

Method

  1. Preheat your oven to 200 degrees fan.

  2. Rub the spread into the flour until it resembles a breadcrumb texture.

  3. Add in the sugar, chopped Mars bar and apple and combine.

  4. Add in buttermilk until it forms a dough. Don’t overmix. Only add enough milk to bind the ingredients, it shouldn’t be too soft or they will spread out too much.

  5. Put a little flour on your hands and roll each one into a round scone shape — this makes about 4 scones.

  6. Or you could roll out on a floured surface and use a cutter.

  7. Place close together on a tray and bake for 18–22 minutes until just golden.

  8. Drizzle over some melted milk chocolate and add a piece of Mars bar to each.

Perfect with coffee

Jill says she likes to leave the scones for around half an hour after baking so the melted chocolate can set slightly before serving.

That short wait keeps them soft and delicious while making them much easier to slice and share.

The combination of gooey chocolate, caramel and tart apple makes them especially good alongside an iced latte, fresh coffee or even packed up as a sweet weekend treat for days out and family visits.

The kind of bake readers will save immediately

Part of the charm of Jill’s recipes is how achievable they feel. There is no complicated technique or endless ingredient list — just approachable homemade baking with flavours people genuinely want to eat.

These Mars Bar and apple scones capture that perfectly, balancing nostalgic chocolate sweetness with fresh fruit and soft golden crumb in a bake that feels playful, homemade and made for sharing.
