JILL BAKES | Slow Cooker Sausage, Cider & Potato Casserole

INGREDIENTS…

Serves 4


Spray veg oil

8 pork sausages

2 red onions, in large chunks

3 carrots, peeled and cut into chunks

1kg baby potatoes, halved

1 tosp tomato purée

2 tbsp Worcestershire sauce

2 tbsp cornflour



300ml cider (or apple juice)

1 chicken stock pot dissolved in 100ml

boiling water

1 bay leaf

11/2 tbsp wholegrain mustard

3 small eating apples (I use Granny Smith)

Black pepper


Slow Cooker Sausage, Cider & Potato Casserole

INSTRUCTIONS…


Preheat the slow cooker.


Optional step: Add the sausages to a non-stick frying pan and brown them all over for about 5-10 minutes.


Add all the ingredients into the slow cooker and stir well.


Cook for 4 hours on high or 7-8 hours on low.


Serve and enjoy! Remember to remove the bay leaf!
