This is such a tasty and easy dinner... only one tray to wash up too, which is my favourite type of dinner!

County Antrim Foodie and Instagrammer
4 chicken fillets
4 slices chorizo
4 slices mozzerella cheese
4 bacon medallions
Spray veg oil
1kg baby potatoes, cut in half if large
200g baby plum or cherry tomatoes
2 peppers, in large chunks
10 mushrooms, halved
A few stalks of tenderstem broccoli
1 chicken stock pot dissolved in 150ml
1 tsp smoked sweet paprika
Preheat the oven to 180 degrees fan.
Slice through the thickest part of each chicken breast, making sure not to cut the whole way through.
Place a slice of chorizo and mozzerella inside and wrap using a bacon medallion.
Set into a large oven tray.
Add the potatoes, tomatoes and peppers.
Spray with oil and sprinkle over the paprika. Season with black pepper. Cook in the oven for 25 minutes.
Add the mushrooms, broccoli and pour over the chicken stock.
Return to the oven for another 20 minutes. Serve and enjoy!
