JILL BAKES | Honey Mustard Chicken

I've updated my original honey mustard chicken recipe to make it even easier with less washing up - this is so tasty it's one of my favourites and works so well with rice or potatoes!

INGREDIENTS…

Serves 4


1 red onion, sliced finely

4 chicken fillets

2 tbsp wholegrain mustard

1/2 tbsp Dijon mustard

11/2 tbsp honey

1/2 tsp dried rosemary

Black pepper

1 tbsp cornflour dissolved in 2 tbsp cold water

1/2 chicken stock cube dissolved in 50ml

boiling water

1 heaped tbsp light or full fat cream cheese

Splash boiling water (only if needed)

INSTRUCTIONS…


Preheat oven to 200 degrees fan.


Place the chicken fillets and sliced onion into an ovenproof dish.


Make up the sauce in a medium bowl by mixing the mustards, honey, rosemary, black pepper, cornflour paste and chicken stock together. Pour over the chicken and mix to coat the chicken.


Cover the dish with a lid or tin foil if your dish doesn't have a lid.



Cook for 45 minutes, then remove the foil and cook for a further 15 minutes until the chicken is fully cooked.


Remove the chicken from the dish and set aside.


Add the cream cheese into the sauce in the dish and stir well to form a creamy sauce - add a splash of boiling water if it's too thick.


Serve the chicken with the sauce on top.
