JILL BAKES | Easy Chicken Pasta Bake


A perfect family favourite meal! Budget-friendly, tasty and mostly made with things you’ll already find in your cupboards. The yummy cheesy breadcrumb topping using fresh breadcrumbs is delicious!


This is a great one to make some extra of and freeze for an easy meal another time.

INGREDIENTS…

Serves 5-6


Spray veg oil

4 chicken fillets

2 peppers, sliced

2 handfuls frozen peas

1 large tin sweetcorn

2 x 295g tins condensed cream of mushroom soup

1 tin semi-skimmed milk (~300ml)

1 chicken stock pot

Onion salt and pepper

400g dried pasta

100g grated cheese

200g Fresh Breadcrumbs



INSTRUCTIONS…


1. Spray a large non-stick pan with veg oil. Cut the chicken into small chunks. Cook for 2-3 minutes on each side until cooked.


2. Meanwhile cook the pasta as per packet instructions.


3. Add the peppers, frozen peas and sweetcorn into the pan and cook for 2-3 minutes.


4. Add the soup, stock pot and milk. I use one of the empty soup cans to measure the milk to save on washing up! Stir well to form a sauce. Meanwhile preheat the oven to 180 degrees fan.



5. Stir the cooked pasta into the sauce. Season with salt and pepper.


6. Transfer into an ovenproof dish. Mix the breadcrumbs and cheese together and sprinkle over the top.


7. Cook in the oven for 20-30 minutes until golden brown. Enjoy!


You could also make this up to step 6 and keep in the fridge overnight. Will take an extra 10-15 mins cooking time.
