Chicken Pesto Pasta meal-prep friendly salad & (485 calories and 38g protein per portion).
Perfect for meal prep or for lunches. You’ll want to save this recipe!
Taking half an hour on a Sunday to get lunches sorted for the week ahead is SO worth it to me!
Top tip: leave the chicken out for a perfect pasta salad for BBQs/picnics!

INGREDIENTS…
Serves 3
3 chicken breasts
1 tsp onion granules
Salt and black pepper
200g pasta (I prefer fusilli but I only had penne)
4 tbsp basil pesto
2 tbsp light mayo 1 tbsp 0% Greek yoghurt
75g grated or shaved Parmesan (or use mozzerella)
3 handfuls rocket
2 handfuls cherry or baby plum tomatoes, halved
INSTRUCTIONS…
Set the chicken into the air fryer (I use a paper liner to save on washing up). Season with salt, pepper and onion granules. Cook at 180 degrees for about 20-22 minutes until cooked through.
Meanwhile boil the pasta in a medium-large saucepan as per packet instructions. Drain and add the pasta back into the saucepan.
While it's still warm, add the mayo, Greek yoghurt and pesto. Season well with salt and pepper. Stir to combine, then leave to cool a bit.
When the chicken is cooked, shred or chop into bitesize pieces. Toss it, the tomatoes, rocket and the shaved Parmesan through the pasta. Serve and enjoy.
You can dish into containers and store in the fridge for a few days for easy meal prep lunches!
