JILL BAKES | Smoky Chicken Fajita Bowl



This is a super quick and easy 30 minute meal - perfect for a night you are in a hurry.


The leftovers also heat up brilliantly for lunch in a wrap next day!

INGREDIENTS…

Serves 3-4


Spray vegetable oil

3 chicken fillets, in strips

2 peppers, sliced

2 red onions, sliced

Small punnet mushrooms, sliced

2 tsp smoked sweet paprika

1 tsp BBQ seasoning

1 tbsp dark soy sauce

1 tbsp light soy sauce

1 tsp Worcestershire sauce

Pepper and onion salt


Shredded iceberg lettuce

Handful cherry or baby plum tomatoes, halved

2 packets microwave Mexican or BBQ rice

4 tbsp reduced fat sour cream or creme fraiche

1-2 handfuls grated reduced fat cheddar cheese



INSTRUCTIONS…


1. Cut the chicken fillets into strips. Over a medium-high heat, spray a pan with oil and add the chicken into the pan. Cook for 2-3 minutes on each side until browned.


2. While the chicken is cooking, prepare your veg.


3. Remove the chicken from the pan. Add the veg, soy sauces, Worcestershire sauce, paprika, BBQ seasoning, salt and pepper and cook for 3-4 mins until softened. (You can also add some chilli powder or chilli flakes if you want it spicy.)


4. Add the chicken back in and warm through for another 2-3 minutes.


5. Cook rice in the microwave as per packet instructions.


6. Add everything into a bowl…lettuce and cherry tomatoes, rice, the chicken/veg mixture and top with cheese and creme fraiche. Serve and enjoy!
