JILL BAKES | Slow Cooker Chicken Noodle Soup


It’s officially soup season again! This is a really tasty and easy lunch - perfect for batch cooking for healthy and budget-friendly lunches.


It was great comfort food when I was feeling under the weather last week too so a good one for cold and flu season!

INGREDIENTS…

Serves 8


1 whole large chicken (or 4-6 chicken fillets/thighs)

6 chicken stock pots/cubes dissolved in 2L boiling water

1 onion, diced

3 carrots, peeled and diced

2 stalks celery, diced

2 leeks, sliced

1/2 teaspoon dried thyme

1/2 teaspoon dried rosemary

2 bay leaves

1 tsp onion granules

Black pepper

Juice of half a lemon

200g spaghetti, broken into thirds



INSTRUCTIONS…


Preheat the slow cooker on low.


Add all the veg and herbs into the bottom of the slow cooker. Set the chicken on top. Pour over the stock.


Cook for 6-7 hours on low or 3-4 on high.


When the chicken is cooked, lift it out onto a board. Add the broken spaghetti into the soup and cook for ~30 minutes. Meanwhile shred the chicken and add back into the broth.


Serve and enjoy - preferably with crusty bread!
