JILL BAKES | Old-School Flakemeal Biscuits



My grandma’s trusty recipe and a Northern Irish staple at every church tea or function… old-school flakemeal biscuits.


Sometimes you can’t beat the classics, and I’m always tempted by a flakemeal biscuit - especially when they’re dipped in Cadbury’s chocolate!


These are so easy to make, literally 10 minutes to make and 12 to bake and the job is done - great to make with kids!

INGREDIENTS…

Makes 14-16


110g butter

55g caster sugar

1 dessertspoon golden syrup

150g porridge oats

60g plain flour

15g desiccated coconut

Pinch baking soda

Pinch salt

100g milk/dark/white chocolate for decorating (optional)



INSTRUCTIONS…


• Preheat the oven to 160C. Cream the butter and sugar for a few minutes until light and fluffy with a stand/hand mixer.



• Add the syrup and mix. Add the flour along with the other dry ingredients and mix to combine. 



• Flour your work surface and knead the dough briefly to bring it together.




• Roll out leaving the dough fairly thick (about 0.5cm) and cut out circles with a plain cutter. If the dough crumbles a bit, just squash it together.



• Place on a lined baking tray, leaving some room between them as they will spread slightly. Bake for 12-15 minutes, or until lightly golden.



• Transfer to a cooling rack and leave to cool completely. Enjoy plain or dunk one side of the biscuits into melted chocolate and allow to cool.
