JILL BAKES | Lemon and Lime Drizzle Cake



This is a super easy cake recipe which is light, moist and so delicious - I love the addition of the lime for a twist on the classic lemon drizzle!

INGREDIENTS…


You will need either a 2lb or two 1lb loaf tins and loaf tin liners (or greaseproof paper).


200g caster sugar

200g spread or butter

4 large eggs

220g self-raising flour, sifted

1 large lemon, zested and juiced

2 limes, zested and juiced

100g icing sugar


INSTRUCTIONS…


1. Preheat oven to 160 degrees fan.


2. Put your loaf tin liner into the tin or grease and line a tin if you don't have a liner.


3. Beat the caster sugar, spread and most of the lemon and lime zests together with a hand or stand mixer for about 5 minutes until light and fluffy. Leave a small amount of both zests aside for decoration later.


4. Add the eggs and sift in the flour. Mix until smooth with the mixer.



5. Add half the lemon and half the lime juice and combine.


6. Pour into the lined loaf tin and bake for 45-50 minutes until golden and a skewer comes out clean. Once cooked, remove from the tin, peel down the sides of the loaf liner to expose the sides and leave to cool.


7. Mix the icing sugar together with the remaining lemon & lime juice. Add a splash of milk or water if it's too thick but be careful as if it's too runny it will run straight off your cake!


8. Pour over the cake once cooled a little and sprinkle over the lemon and lime zests. Slice and enjoy!
