With Pancake Tuesday coming this week, this recipe is so simple you don't even need measuring scales! Perfect to make with kids or just to make life easy.

Ingredients
This will make around 8-10 large pancakes
• 9 heaped tbsp soda bread self raising flour
• 4 tbsp caster sugar
• 3 eggs
• 280ml (1/2 pt) buttermilk
Instructions
1. Sieve the flour into a large bowl. Add the sugar and combine.
2. Add the eggs and buttermilk and mix until it forms a thick batter. You might not need all of the buttermilk - this batter should be really thick to make the pancakes fluffy!
3. Lightly grease a griddle or pan with spread or butter. Ladle on the mixture depending how big you want your pancakes!
4. Cook over a medium heat for a couple of minutes until there are plenty of bubbles, then flip and cook on the other side.
If you are using a pan, make sure it is non-stick!
Serve with whatever yummy toppings you feel like!
