JILL BAKES | Easy Chicken & Broccoli Bake




This dinner is perfect to use up leftover roast chicken and is also super quick to put together!


Serve with mash or roasties, or make into a pasta bake - just add cooked pasta before topping and baking!

EASY CHICKEN & BROCCOLI BAKE

Ingredients

(Serves 4)


• 3 chicken fillets or leftover roast chicken

• 1 small tin sweetcorn

• 1 broccoli

• 1 tin Bachelors condensed cream of mushroom soup

• 1 tbsp mayonnaise

• 80-100ml semi skimmed milk


For topping:


• 100g 30% reduced fat cheddar cheese

• 1/2 sharing bag of cheese and onion crisps (optional but delicious!)


Instructions


1. Cook your chicken fillets in the oven for about 25 minutes until cooked through.


2. Parboil the broccoli in a pan of boiling water for 2-3 minutes until slightly softened.


3. Add the cooked broccoli and sweetcorn into a medium casserole dish.


4. Meanwhile make the sauce in a large saucepan. Mix together the soup and mayonnaise. Add enough milk to make a nice sauce consistency and cook for a few minutes until it's bubbling.


5. Cut the cooked chicken into bite size pieces and add into the dish. Pour the sauce over and mix through.


6. Grate the cheese and crush the crisps. Mix together and sprinkle over the top.


7. Cover with foil and bake at 200 degrees for 30 minutes until golden and bubbling. Remove the foil for the last few minutes to brown the top.
