JILL BAKES | Easter Rocky Roads

You will want to make these! You can literally add whatever chocolates you want to this... mini eggs, creme eggs, malteaser bunnies etc! A great way to use up some Easter chocolate.

Ingredients Makes 16


275g milk chocolate (I recommend using a good quality chocolate!)

75g dark chocolate

100g unsalted butter

100g golden syrup

1 tsp vanilla extract

Pinch of salt

75g mini marshmallows

125g digestive or rich tea biscuits, chopped (keep fairly big pieces)

400-500g of any chocolate! I used:

296g family bag mini eggs (keep some out to decorate)

1 bag giant white chocolate buttons

1 bag smarties white chocolate buttons

150g melted white chocolate and leftover chocolates to decorate



Instructions

Line an 8 inch square tin with baking paper.

In a large bowl over a pan of boiling water on a simmer, melt together the milk and dark chocolate, unsalted butter, golden syrup, salt and vanilla extract. Remove the bowl from the heat before the chocolate has fully melted and let the residual heat melt the chocolate fully. (If the mixture gets too hot it can split - if this happens add a splash of milk and whisk until it combines!)


Add in the mini marshmallows, digestive or rich tea biscuits and your Easter chocolates - leave some to decorate. Stir well to combine.


Drizzle with melted white chocolate and extra chocolates.

Chill in the fridge for 2-3 hours and cut into 16 squares. Use a sharp knife! Then enjoy - these are a real treat!
