Roasties are a very important part of Christmas dinner to me… these ones will definitely not disappoint!
On Christmas Day if your oven is very full, they make take slightly longer to cook and you may need to turn up oven temp to 220°C fan!

INGREDIENTS…
• Maris Piper potatoes
• Vegetable or rapeseed oil (I normally use Crisp n Dry)
INSTRUCTIONS…
• Peel the potatoes. Leave small potatoes whole, cut bigger ones in half. Small potatoes make the best roasties!
• Preheat the oven to 200 degrees fan.
• Add the potatoes to a large saucepan and cover with boiling water. Cover with a lid and parboil the potatoes for 8-10 minutes. Drain the water out of the saucepan, leaving the potatoes in the saucepan.
• Set back on the hob for about 10 seconds with the lid off to dry the potatoes.
• Then put the lid back on and shake the potatoes for about 10-20 seconds until they are ruffled on the outside (be careful not to over shake or they will all mush!)
• Pour some vegetable oil into a small bowl.
• Using a slotted spoon, dip each potato into the oil, making sure it's fully coated. Place onto a tray.
• Cook in the top shelf of the oven for about 55-60 minutes, turning once after about 40 minutes when the bottoms are nice and crispy.
