Dunsilly Hotel introduces new Head Chef Martin Gourley




Dunsilly Hotel, Antrim, has announced the arrival of their new Head Chef, local man Martin Gourley.

A former student at Slemish College, Ballymena, and the Northern Regional College (NRC), Martin kick started his culinary career right here at the Dunsilly as an apprentice, before working his way up to Sous Chef at it’s sister business, the Dunadry Hotel and Gardens.


Martin’s career so far has been full of culinary excellences, including helping Dunadry Hotel and Gardens’ Mill Race Restaurant gain an AA Rosette.





Here is what Martin had to say, when asked what it means to him to be Head Chef of Dunsilly Hotel:


“It’s a position I took with great pride and excitement, and my first role as a head chef. I think it is very fitting that it is in the same kitchen I started my cheffing career in nine years ago!


“I welcome the challenge with open arms, as I thrive when I’m being tested on my culinary and managerial skills. I am excited to see what myself and my excellent team of skilled chefs can accomplish over the coming times.”


The team are excited to welcome Martin back and can’t wait to see what he will achieve as Head Chef of Dunsilly Hotel.

Liver & Crispy Streaky Bacon on Roaster Fondant’s, Roasted Cauliflower, Pickled Shallot Rings.


Pan Fried Seabass, Chilli Crushed Potato, Hollandaise with Capers, Gherkin & Parma Ham.


Pan Seared Duck Breast on a of Pok Choi, Duck Leg Arancini, Wild Mushrooms, Redcurrant Chutney.
