This classic Northern Irish recipe is the perfect way to use up leftover champ or potatoes from your Sunday roast. I forgot how delicious it is when you make your own!

Ingredients
Makes 8 pieces
• 350g leftover champ
• 80g self raising flour
• 40g melted low-fat spread or butter
• Salt and pepper
Instructions
• Warm your leftover champ in the microwave for 1 minute.
• Melt your spread/butter for 30 secs and add.
• Sieve in the flour. Combine well and season with salt and pepper.
• Flour your work surface. Divide the dough into 2 balls and roll out each into a circle about 0.5cm thick. Cut each circle into 4 quarters.
• Cook on a griddle for 4 minutes each side or until golden brown. (Don’t grease your griddle)
• Best served warm with butter (or a low-fat olive-based spread)!
