JILL BAKES | Creamy Dauphinoise Potatoes

I don't think I've ever had so many of you want the recipe for something than when I posted these on Instagram last weekend!

I'm usually a roast potato kind of gal but these might change my mind!! A properly delicious side dish that's so easy to make, and using the best local cream!

INGREDIENTS…

Serves 8

500ml double cream

500ml milk

Pinch dried thyme

Onion salt and pepper

8 large or 12 medium Maris piper potatoes

3 handfuls grated cheddar cheese

INSTRUCTIONS…

1. Preheat oven to 180 degrees fan

2. Add the cream and milk into a large saucepan. Season well with onion salt and pepper and add a pinch of thyme. Bring to a simmer over a medium heat stirring often - this takes about 10 minutes.

Meanwhile peel the potatoes and slice into fine slices (about 3mm).

3. When the cream is simmering (just starting to boil), add the potato slices and cook for about 3 minutes until just softening.

4. Transfer the potatoes into a large casserole dish, then pour over the warm cream.

5. Sprinkle with grated cheese and cook in the oven for 30-35 minutes until golden brown.

6. Remove from the oven and let it sit for 5-10 minutes before serving. Enjoy!
