So many of you wanted this recipe when I posted a sneak peek on my Instagram stories recently!
I always seem to end up with too many ripe bananas and this is a great way to save them from the bin. It’s also a nice change from banana bread.
This cake is so full of chocolate chips and is so moist and fudgey! In the photos it’s a bit rustic looking because I couldn’t wait for it to cool to cut it! Amazing with a cuppa or heated up and served with ice cream for a pudding.

INGREDIENTS…
Makes 1 large 2lb cake
3 large ripe bananas
130g plain flour
60g cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon sea salt
60g unsalted butter, melted
60ml vegetable oil
125g soft light brown sugar
25g caster sugar
1 large egg, at room temp
2 teaspoons vanilla extract
150g chocolate chips (dark, milk or white)
INSTRUCTIONS…
1. Preheat the oven to 170 degrees fan. Grease and line a 2lb loaf pan or use a loaf tin liner. Melt the butter in the microwave and set aside.
2. Sieve the flour, cocoa powder, baking soda, baking powder and sea salt into a large bowl and stir to combine.
3. In a separate large bowl, mash the ripe bananas with a fork until really smooth. Add the melted butter and oil and stir until combined. Then add in the sugars, egg, and vanilla extract. Stir until smooth.
4. Add the dry ingredients into the wet ingredients, stirring to combine but not over-mixing . Stir in about 3/4 of the chocolate chips.
