I often get asked for lunch inspiration… soup is my go-to but when I need a change I like to make up a pasta salad that I can meal prep.
This one is really tasty and is great for using up leftover chicken or pasta!
This makes enough for about 3 lunches - if meal prepping this for a few days lunches, I’ll leave out the tomatoes and lettuce and add them in fresh each day otherwise they can wilt and go mushy.
I usually use wholemeal pasta or a mix of white and wholemeal, but any pasta type/shape will work!

INGREDIENTS…
Serves 3
150g dried pasta (any type) .
1 small tin sweetcorn
1 pepper, diced
2 tomatoes, diced
1 baby gem lettuce, shredded
10 grapes, halved
30g grated cheddar cheese
3 tbsp BBQ sauce (I use Crucials)
2 tbsp light mayonnaise
Salt and pepper
INSTRUCTIONS…
1. Preheat the oven to 180 degrees fan.
Place the chicken fillets onto an oven tray and spread 1 tbsp of the BBQ sauce between the 3 fillets. Cook for 25 minutes or until the chicken is cooked through. When cooked set aside to cool and chop into small chunks.
2. Cook the pasta as per packet instructions.
Once cooked, drain and set aside to cool.
3. Prep the salad veg. Add all the ingredients into a large bowl and combine.
This would be a lovely salad for a BBQ.
